Serrano Chilli Peppers

The serrano pepper (Capsicum annuum) is a type of chilli pepper that originated in the mountainous regions of the Mexican states of Puebla and Hidalgo. Unripe serranos are green, but the colour at maturity varies. Common colours are red, brown, orange, or yellow. Serranos are very meaty and thus they do not dry very well. They are generally between 1 and 4 inches long (2.5 to 10 cm) and around ½ inch (1 cm) wide. Serrano chillis take just 73 days to grow to full size.

Serranos are bright red in colour and rate between 10,000 and 20,000 on the Scoville heat scale, thats up to 5 times hotter than a jalapeno. They are a desirable chilli because of their moderate heat and versatility in sauces.

Serrano is such a romantic name for an all purpose chilli. The serrano chilli is thick, fleshy and is great to grind, crush and use as a spicy condiment to sprinkle over a variety of dishes. They have thin walls, so they don't need to be charred, steamed, and peeled before using. Take a chilli con carne up a notch by adding these ground up with some red wine. Also excellent for the more daring barbeque connoisseur.
