Pequin Chilli Peppers

Pequin is one of the smallest chilli peppers but also one of the hottest. The chile is very small and has an elongated shape, very similar in taste and heat to the Chiltepin. Often mistaken for each other, they are both very popular and eaten fresh or dried. The heat from Pequin chillis is slow to take effect but lasts on the taste buds for a long time.

Younger Pequin chillies are green in colour and as they mature they turn orange-red or brownish-red when dried. When found in the wild, the Pequin chilli are known as the bird pepper or chilli mosquito.

Mildly sweet with a somewhat smoky flavour, the Pequins heat comes from the ribs and seeds of the pepper. Removing some or all of these parts will reduce the degree of hotness. Available fresh, dried, and in powder form, pequin chillies are mainly used to flavour Hispanic, Asian, and Indian foods such as hot-pepper seasoning sauces, soups, stews, and bean dishes. Fresh chillies can be stored in the refrigerator, unwrapped for up to a week.
