Chipotle Chilli Peppers

A chipotle is quite simply, a smoked chilli. Like most producers, we use jalapeno peppers for our chipotles due to their versatility and suitability for smoking.

Jalapenos are kept on the vine as long as possible, then when they are deep red and have lost much of their moisture, they are selected to be made into chipotles.

Most chipotle chillies are produced in the northern Mexican state of Chihuahua. This variety of chipotle is known as a morita (Spanish for blackberry or black raspberry), quite aptly named given the chipotles appearance. In central and southern Mexico, chipotles are known as chile meco, chile ahumado, or tipico. Whilst moritas from Chihuahua are purple in colour, chile meco is tan/grey in color and has the general appearance of a cigar butt. Almost all of the chipotle chillies found in the United States are of the morita variety. Almost all of the chipotle meco are consumed in Mexico, though some are exported to the United States usually available only in Mexican grocery stores.

At present we buy our pre-smoked chipotles directly from Mexico. In Summer 2009 we plan to change this by smoking our own jalapeno peppers at our facility in Nottinghamshire in a bid to improve traceability and reduce food miles.
